Chicken Pot Pie

I LOVE Chicken Pot Pie...and so does my family...
YES...even Bryson LOVES it...
I love it so much that anytime I cook a meal for a friend or a meal train..
this is my go to recipe...
It's yummy...warm...and comforting...

INGREDIENTS

Crust
1 box Pillsbury refrigerated pie crusts, softened as directed on box

Filling
1/3  cup butter or margarine
1/3  cup chopped onion
1/3  cup all-purpose flour
1/2  teaspoon salt
1/4  teaspoon pepper
1 3/4 cups Progresso chicken broth (from 32-oz carton)
1/2 cup milk
2 1/2 cups shredded cooked chicken or turkey
2 cups Green Giant Valley Fresh Steamers frozen mixed vegetables, thawed

 

DIRECTIONS

 1  Heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie pan.

 2  In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.

3  Stir in chicken and mixed vegetables. Remove from heat. Spoon chicken mixture into crust-lined pan. Top with second crust; seal edge and flute. Cut slits in several places in top crust. 

4  Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Let stand 5 minutes before serving.

Bryson asked me today to make this for dinner...This recipe is great for busy moms...Sometimes I double the filling part of the recipe and freeze it...then on a busy weekday I just thaw it out and throw it into a pie crust for quick but homemade meal!

2011 Christmas Card



Making Slime...Pinterest Style!

I confess...I have a Pinterest addiction...It all started with my search for baby nursery ideas...and just spiraled out of control from there...

Bryson and I like to look for fun ideas together...and found a recipe for Slime...we immediately ran to the store to buy everything we needed...and had the best time making it...So I wanted to share the fun!

 You need a box of Borax Laundry Booster (If I found it in Snyder...you can probably find it anywhere)
1 box of food coloring...Glue...Popsicle sticks and plastic cups...
 You will also need a bottle to mix the Borax with water...this is what I had on hand but don't recommend
using a glass bottle for obvious reasons...
 Mix about 1/4 cup of Borax to about 16oz of water
and shake until dissolved...
 in plastic cups measure out and mix equal parts of Glue and Water...
 Add food coloring of your choice and mix well...
then mix in small amounts of Borax solution...the slime will start to form on  the popsicle stick...
 Keep adding and mixing Borax solution until you get the consistency you want...
The more Borax you add the more firm your slime will be...
 Take a moment to be silly...
 and then rinse the slime with cold water...
 Daddy joined in the fun...and made green slime...
 We played with the first batch then made more!
as you can see 1 bottle of glue goes a long way...
I hope I don't find any of this slime on the rugs or couches...but it's not supposed to be very hard to clean up...and was a fun family project...so We will definitely be making Slime again!

New Year....New Blog!

This past year has been quite eventful for our family...We have been through a lot of changes...and more change is headed our way...One of the most exciting changes...is the size of our family...we will soon be a family of four!  We have been so blessed with a bright...funny...handsome son...and I can't wait to find out if he will have a brother or sister!  The other day I went through a huge box of Bryson's baby pictures (Yes Box...not the best storage for priceless memories) and thought...there has to be a better way to keep these memories safe for my babies...and then it hit me...My family blog...the one my friend JaciJohnson  from Freely Me Designs who is brilliant and designs blogs...logos...and cards made for me months ago...the one I have yet to touch...That is how I will save our families memories for my children and share them with family and friends...
So with the new Year about to start...I have made a resolution...to keep up with our family blog for my babies...Wish Me Luck...and great blogging for 2012!
